Farmer's Market Today
I went to the Farmers Market today. They have added a new Monday F.M. from 2:30-7 on Main Street in between Rodd and Townsend. We went to see what we could see and to get FHE treat. I was pleasantly surprised by the amount of fruits and vegetables they had. We bought cherries, salad greens for dinner, edible pea pods, cauliflower, and my teens favorites cucumbers...we of course went to get FHE treat so cookies were on the list and they had some yummy varieties that were still warm and that my kids will love(I took a nap instead of making the requested cookies for FHE so this worked out swimmingly) and My Princess loved looking at all the frogs which are downtown this year!!! I LOVE THE FARMERS MARKET!!!!! (and the new added day)

11 Ways to Use Your Freezer as a Money-Saver
Whether you have a stand alone freezer unit or yours is part of your refrigerator, your freezer is either costing a lot in wasted energy or it's saving you a bundle in food costs. Here's how to make sure your freezer is saving you money:
1. Get a refrigerator/freezer thermometer to check the temperature. The closer to zero degrees Fahrenheit your freezer stays, the better. Food kept at zero degrees will last months longer than, say, 20 or 31 degrees.
2. Trapped air causes freezer burn. Make sure you select a container small enough so the contents fill it. You can remove a great deal of the air from a freezer bag without a fancy vacuum sealing machine. Seal all but enough space to slip in a drinking straw. Now inhale on that straw to pull all the air out of the bag. Quickly zip the last bit. Pop it into the freezer.
3. It takes a lot more electricity to keep an empty freezer at zero degrees than a full one. Pack it as tightly as you can. If you don't have enough food to do that, fill empty milk cartons with water and freeze them. The square shape is better than round jugs because you can stack them like bricks. Bonus: You'll have plenty of fresh water in the event of a power outage.
4. The simplest way to preserve fresh tomatoes is to freeze them whole. Just rinse, dry and spread them out on a cookie sheet. Freeze overnight. When frozen, put them in a freezer bag and return to the freezer. To use, remove from bag and thaw. When thawed, slip the skins off, and use in your favorite recipes. A thawed tomato will not be like a fresh tomato, but it is great for making sauces and chili.
5. You can freeze fresh zucchini. Choose young squash with tender skin. Wash and cut in 1/2-inch slices. Drop into boiling water for three minutes. Cool promptly, drain and package in zip-type bags or containers leaving 1/2-inch headspace. Seal and freeze.
6. To freeze fresh herbs (basil, cilantro, etc.), wash, drain and pat dry with paper towels. Wrap a few sprigs or leaves in wax paper. Seal in a freezer bag. Freeze. While still frozen, whack the bag on the counter top and the herbs will shatter. Chopped herbs in an instant! Use as you would fresh ones.
7. To freeze onions, chop them and spread into a single layer on a cookie sheet. Freeze. Once frozen, pour them into zip-type bags or containers and replace in freezer.

Dry Beans What a Pain to Use Until Now...
I found this little tidbit on-line and now using dry beans is a breeze.
Dry beans are an economical source of protein, but they are not always convenient because you have to soak them. I like always to have beans at the ready. I soak them overnight, drain and rinse. Then, I put the soaked beans in freezer bags and store them in the freezer. This also helps take up freezer space for maximum freezer efficiency.

Apples and Pears
My new find is less than 2 miles away from my house and I can't hardly beleive it has been there for 7 years and I never knew about it. There is the cutest littel apple orchard(it also has pears, pumpkins, honey and squash) just down the road from me. I took the kids there yesterday and we had so much fun roaming around all the trees. We were able to see so much the kids favorites were the apples be shined in a special machine and seeing the bee boxes with very active bees making honey. Oh so fun and again so close to home.

Peaches
I bought my peaches today and have them all spread out on tables waiting for them to be ready for me to can. I don't can a lot of items. My preferred method is freezing but I do like to keep myself canning every year so I do not become rusty at it. This fall I will can peaches and my grandma's pear sauce. Then in the winter I will be doing something else for the first time. Either chili or stew? The jury is still out on that one.
Peppers and onions- What a Pair!!!!
One of my favorite foods is fajitas-yum yum! In preparation of eating them all winter long with the great vegetables we have in season right now this is what I do:
1. julienne onions and peppers
2.freeze them on trays
3. put them into labeled freezer bags
The other thing I do with onions and peppers is dice them for omelettes. I do the same thing as above except I put them into snack bags and then into one big freezer bag labeled.

Jam, Jam and more Jam!!!
I have finally wrapped up my jam making days. We started with strawberry, then cherry, and the season finale raspberry the family favorite! Now I just need to learn to make homemade bread and we will be on our way!
